Nilagang Baka (Beef Soup)


Nilagang Baka

Nilagang Baka or Boiled Beef is one of the most simple dish you will encounter yet so flavorful once done right.  Its so simple the main ingredients are only beef, water, onion and vegetabales.  It is an very old recipe which might not have been originated in the Philippines in fact I have remembered reading in the bible that that boiled lamb during those times, and I suppose during those days things arent as complicated as now. Usually made out of bony beef part usually beef ribs or beef neck as the bones help in adding flavour to the soup together with onions.

Ingredients

1kg beef (any bony part, ribs or neck)
1/2 cabbage, sliced or 1 pack bok choy
2 large onions, chopped
1 bunch spring onions, sliced
water
1 tbsp whole peppercorns
freshly ground pepper
fish sauce

Method

1. On a pot add beef, onions and peppercorn together with water (just enough to cover the beef).
2. Bring it to a boil and simmer for 1 hour or until the beef is nearly falling apart from the bones.
3. Add cabbage and spring onions cook for additional 2 minutes.
4. Flavour with fish sauce and season with freshly ground black pepper.
