Italian Pasta Salad

This pasta is a good mix of different Italian flavours like salami, roasted capsicums, olives and feta cheese dressed in a balsamic vinaigrette, a common salad dish here in New Zealand which is a good pair with roasts. I see this a lot in the salad section in the supermarkets here but they don’t have that much ingredients on it, all you see are overcooked pasta and red capsicums, we tried buying some before which tasted average but I am looking for more flavour so I made some at home.

Ingredients

200g spiralli or bow tie pasta
2 roasted red capsicum, sliced
1/2 cup salami, cubed
15 pcs black olives, sliced
1 clove garlic, minced
1/2 cup crumbed feta cheese
25 pcs cherry tomatoes, cut in half
2 tbsp mayonnaise
2/3 cup balsamic vinaigrette dressing
freshly ground black pepper

Method

1. Cook pasta according to packet instruction, once cooked drain and rinse with cold water until cool. Set aside.
2. Mix together balsamic dressing and mayonnaise.
3. Toss everything together, chill then serve.
