Doughnut or Donut is type of pastry that is deep-fried and shaped in form of a circle or rings; it may contain various types of fillings and/or toppings and glaze. There are 3 popular types of doughnut and those are the ring shaped, circular ones with fillings and the spherical shaped ones made out of doughnut holes. Cooking method is also not restricted to frying as there is also some baked form but they taste differently as they don’t absorb oil during the cooking process.
It is said that doughnuts where introduced by the Dutch settlers in North America like other desserts such as cookies, cobblers and apple pie. They said it is a type of olykoek (oil cake in Dutch). The first version never had holes in it and it was just invented by Hansen Gregory in 1847 when he finds centres of the doughnuts without holes tends to be raw and usually that middle part absorbs too much oil during the cooking process, he then punched a hole in the centre of the dough prior to cooking with a tin pepper container to get rid of it.
This post was made because my daughter keeps asking me for doughnuts, too sad it is not that popular here like in the Philippines and America that is why we seldom see doughnut shops. Though we can buy in the supermarkets or bake shops but they don’t have a good texture like the ones in Krispy Kreme so for her not to be dissatisfied and hate doughnuts for life I made one at home Krispy Kreme dough style. But like Hansen I somehow made this doughnuts in a manual way as we don’t have any doughnut cutter, I am not even sure where I can buy one in here, so the doughnuts you see above was cut by a tin can cover from a glass container then for the middle I used a medicine cup, you can call it crude but it works just look at the results above. I have done some crude ways before like using medicine cups as a mould in Polvoron or even shaping Hopia manually. How about you have you tried to improvise in your kitchen? If you do can you share your story.
Ingredients (Doughnuts)
2 1/2 cups flour
1/4 cup sugar
1/2 tsp salt
3 tsp yeast
2 tbsp warm water
3/4 cups warm milk
1 egg
3 tbsp shortening
canola oil
Ingredients (Cream Cheese Glaze)
1/4 cup margarine, softened
1/4 cup cream cheese
2 tbsp evaporated milk
3/4 cups confectioners’ sugar
1/4 teaspoon vanilla
pinch of salt
Ingredients (Chocolate Topping)
1/2 cup chocolate chips
3 tbsp evaporated milk
2 tbsp powdered sugar
1/2 tsp vanilla
Method
1. Mix well together yeast and warm water in a mixing bowl.
2. Add milk, sugar, salt, shortening, eggs and half of the flour. Using a mixer combine everything together until evenly mixed.
3. Add the remaining flour then mix until smooth, texture will be sticky at this point. Cover bowl with cling wrap then let it rise for an hour in a warm place.
4. Place dough in a well-floured board, place flour as well on the top of the dough. Using a rolling pin flatten the dough gently until it is half inch thick. Do not press too hard.
5. Cut with a doughnut cutter then place in a floured baking pan; let it rise for 30 minutes.
6. Heat oil in a deep fryer at 180C, of if you are using pan heat oil in medium heat, put in low when you are ready to fry.
7. Drop doughnuts into the oil one or two at a time. Cook quickly around 30-45 seconds on one side then flip to the other side and cook for 30-45 more seconds, it should be golden brown in colour if not cook a little bit further.
8. Remove from fryer then place it on a paper lined tray.
9. Add any glaze you want.

Oh my, I haven’t had a doughnut in the longest time! I remember growing up jam doughnuts with a sugary coating on the outside were always my best – and it was always the smoothed apricot jam in the middle.

OMG!!! I just gained 5 pounds looking at them and I’m not even done yet…LOL. At Fairs here in the US, they have Krispy Kreme burgers. I’ve never had it but my husband and daughter have. They said it’s not bad…

These look really darn good for not having a doughnut shaped mold! I actually think it adds to the recipe that you made these by hand. It’s very reminiscent of how they were first created. I love it! We improvise here a lot too – often using a juice glass as a biscuit cutter, or an empty wine bottle as a rolling pin. My favorite though was when we used a real hammer to pound down some pork. (We have since bought a meat mallet – but the kids got a real kick out of using the hammer!)
I use wine bottles as well before but not the hammers yet as I use the blunt side of the cleaver to tenderize meats. This reminds me of the topchef challenge of not using kitchen utensils

i’ve heard that doughnuts in england doesn’t have a hole and is filled with jam.. I wonder if they bake their doughnuts then.

I can’t believe doughnut shops are not popular there. Is that mean there is no demand (what a healthy mind!), or it just happened to be less doughnut shops…(business opportunity?)??
