Sung Choi Bao of Pork

Sung Choi Bao or San Choi Bao is a dish made out of seasoned stir fried pork, chicken or beef; wrapped in a lettuce leaf then served with a savoury sweet sauce. This Asian style wrap is commonly served as an entree in Chinese cuisine, furthermore, it is also known for its simple but good combination of textures and flavours as it offers a crispness from the lettuce and a hint of sweetness from the sauce.

Ingredients (Sung Choi Bao)

500g minced pork
4 dried shitake mushrooms, rehydrated and finely chopped
6 pcs water chestnuts, finely chopped
1 stalk spring onion, finely chopped
4 cloves garlic, minced
1 long red chilli, chopped
2 tbsp Chinese cooking wine
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp dark soy sauce
1 tsp sugar
1 tsp cornstarch
salt
white pepper
iceberg lettuce head

Ingredients (Dipping Sauce)

3 tbsp hoisin sauce
1 tbsp warm water
1/2 tsp chilli sauce

Method

1. Mix together Chinese cooking wine, soy sauce, oyster sauce, dark soy sauce, sugar, cornstarch, salt and white pepper.
2. In a bowl, put minced pork, chilli, mushroom, water chestnuts and spring onions. Add the sauce mixture and mix well together. Set aside for about 15 minutes.
3. Heat up a wok then add oil. Sauté garlic, add the pork mixture then stir fry until pork is cooked.
4. Place a big spoonful of mixture in the middle of a lettuce leaf, then do the rest for the remaining cooked pork, serve with sauce.

  1. This is one of those meals I would be nervous to try, but would end up loving. I mean the list of ingredients is full of things I really enjoy. I should give this a try. :)

  2. Ooo yummy! I love lettuce wraps in all forms – Chinese, Thai, etc. (And yes I count lumpia sariwa as a kind of lettuce wrap). The specs of red with the brown against the green lettuce looks amazing!
